After my first day of work, I was exhausted. I had gone over tons of job responsibilities, paperwork, and re-orientation procedures, yet somehow I motivated myself to cook. I paid homage to the Heishmans and made tofu bean burritos (A favorite of mine in the Dominican Republic before settling down to play round after round of Rook). On a side note, I really miss playing cards/games with others who enjoy them. I followed Nancy's recipe and perhaps added a little more picante than most Dominicans would like. The greatest thing about that meal is it serves at least 5 or 6. In my case, it made great leftovers.
Later on in the week, I made a type of Thai stir-fry. I made red curry with beef and vegetables. It was great, and once again, I had leftovers. This allowed me to stagger my Mexican and Thai foods while not growing tired of either cuisine. Mmm, probably my two favorites. I should eat Mexican and Thai every week.
Besides meals, I've been settling back in quite nicely. Over the past three weeks, I've gotten to see lots of friends and meet new people. I saw the Phillies when they and my parents were in town. I met up with Juniata alumni at two different events. Also, I've started a workout routine that I've been able to stick with after joining a gym. I hope I can keep this motivation up. Once things lose their newness and luster, it's often difficult to keep at it. Every once in a while, I can be intrinsically motivated. This is one of those times. Additionally, I have more than enough external factors contributing to my renewed lifestyle. Bottom line, I think there are plenty of good things happening in my life right now to help me stick to my goals.
